For all of you who love to eat pancakes and waffles in the morning here is some good health news. Pour on the maple sugar.  Not the fake synthetic stuff, but the pure organic maple syrup  (hopefully non-gmo) that can cost an arm and a leg.   Researchers have discovered that maple syrup contains compounds similar to properties found in anti-inflammatory and anti-oxidant ones.  Maple syrup is shown to match up with the same properties found in green tea, blueberries, and other so called super foods.  These properties have been shown to fight cancer, diabetes and bacterial illnesses according to the researchers at the University of Rhode Island who conducted the study. Initial studies also suggest that polyphenols in the syrup may help keep blood sugar levels in check, important for diabetics, by inhibiting enzymes that are involved in the conversion of carbohydrates to sugar, he said.  The discoveries of new molecules in the syrup also provide chemists with leads that could prompt synthesis of medications to fight other diseases. The findings were presented this week at an annual meeting of the American Chemical Society in Anaheim, California and are to be published in an upcoming issue of the Journal of Functional Foods.  The Federation of Quebec Maple Syrup Producers and Agriculture and Agri-Food Canada funded the study.
